How Can I Get Some Beef?
We generally butcher 3 times a year - usually around January, July and October (our cows determine the schedule - not us). You can buy halves, quarters or eighths and occasionally we have sample packs. Simply fill in an Order Form (you can download one from the Ordering Info tab) and send with a $50 deposit check to secure your place on the list.

Our farm is located in Palestine, IL a 4 hour drive straight south of Chicago. You are always welcome to come to the farm to collect orders and see our operation. If you live in Chicago we have drop off locations in Joliet, Orland Park and Glenview.

Need beef now? Occasionally we will have some ground beef sample packs available however right now they are all sold out.

2012 Butchering Schedule
The weather and the cows set our schedule - we don't determine the schedule, they do. Our January batch is already sold and we plan to butcher again in July and October. It is never too early to reserve your place on the list. The July batch is getting close to sold and October is filling up too. Just send your Order Form and we will call you to confirm that you still want it before we butcher.

Job Opening

We are looking to recruit a full-time Farm Manager. The right candidate will be familiar with the concept of sustainable agriculture, at ease with handling beef cattle on a daily basis and able to handle the everyday problems associated with land management. Skills required for this job will include:

Ability  to operate a tractor for mowing, putting out hay, lifting broken trees off fences etc. 
- Basic carpentry skills for fixing fences, barns, etc
Gentle, but not scared of animals
Ability to keep careful records of cattle  - preferably on computer, but not essential  

The right applicant would be self-motivated and interested in developing the farm further, depending on his/her interests – possibly vegetables, chickens, lamb etc.  

Some on the job training will be provided. 

Additional income might be made at Flying S Aviation as a composite or workshop technician, machinist, or engineer.

Our fall chickens sold so fast we're going to do another batch in the spring. Let us know if you'd like some - it helps with our planning. Price will likely be $4.00/lb and size will be 6lb each.
